Mini Bites for Mini Mouths
Little bites of food in tiny hands are just SO precious. As our #TBT today, we're sharing with you a favorite recipe from our My Minis Menu, plus tips for shrinking down recipes to kid-size bites!
Mac and Cheese Muffins, Grilled Cheese Bites, Mini Pizzas, Cutie Quiche, Piggies in a Blanket...the possiblities are endless. For the Books and Cookies Minis Menu, we chose bite-size snacks with wholesome ingredients. Shredded whole milk cheddar for the Cutie Quesdillas, all-beef piggies in the blankets, and more. One thing we learned while shrinking full-sized recipes is the ratios don't always cut down exactly. Try experimenting with less liquids when reducing your ingredients. Our Mini Muffin and Little Pancake batters tended to appear thicker than full-size recipes, but still puffed up a lot. When you're mixing a recipe for only 4 bite size quiches, an egg and a little milk goes a long way!

Little Banana Pancakes
2 cups dry pancake mix
1 cup milk (skim or whole)
1/2 cup breakfast maple syrup
Pieces of ripe banana, chopped into small pieces
Lightly mist large muffin tin with cooking spray or brush well with olive oil In a large bowl, stir together pancake mix, milk, and syrup until thoroughly combined. Follow instructions for pancake mix ingredients ratio, replacing water with milk and adding syrup (generally 2 cups dry mix, 1 cup milk, 2 cups syrup)
Divide the batter evenly amongst the prepared mini muffin tin cups. Sprinkle the chopped banana pieces over the tops of each muffin cup.
Bake about 15 minutes in a 325 degree oven until cooked through and tops are slightly brown. Let cool 5 minutes before removing from muffin tin. When ready to remove, separate from side of tin with knife and gently pop out of cup.
